Red velvet…day 249

If it hadn’t been for Tania reminding me, I would have completely forgotten to post photos of the cupcakes I baked a few days ago. If there’s one thing I love is baking…not so much because of sweet tooth cause in all honesty out of a batch of 24 cupcakes I’ll eat three at the most…I actually find the process quite soothing and therapeutical.

For over a year I’d been missing red velvet and cream cheese frosting, but thanks to my mother’s thoughtfulness, I received a baking care package consisting of flour, frosting, and decorating sprinkles. As soon as I had a chance, I began baking while waiting for True Blood’s latest episode.

The last photo I absolutely love—it’s Valentino taking full advantage of the baking process to nap on me while I rubbed his belly.

Cake truffles 1st Timer…day 210

After many, many weeks of putting it off…I made cake balls for the first time today and they came out ooooh so good. It didn’t take too long to make them, the only thing is I definitely need a bigger fridge and maybe an extra pair of hands. I honestly didn’t think so many “truffles” would come out of one small cake, but one thing is for sure—Goose and Jay are loving them.

HP7 less than a month away…day 150

I wish I had this much talent for baking and sculpting…might have to take some lessons soon. The movie is a little less than a month away so eventually it’ll be time to sit down and watch all the previous ones in case we missed anything. Who would have thought that a children’s book would have become such a pop culture icon.

Think, think, think…day 116

First day back at the office, and it looks like people are still out on vacay…which meant a laid back day at work. 

I spent most of the morning working on the new image for our VIP stored, but think my creativity might still be tanning and having sangrias in Ixtapa. The ideas just weren’t flowing like they usually do. At the end of the day I had my proposal ready to go and had booked the casting for my upcoming project. 

In the evening I baked a brownie for the boys while Goose fried some enchiladas potosinas. Dinner was really good and it gave all of us time to catch up.

That was fun! … day 82

Two wonderful things happened today!

I discovered MerryCupcakes just opened in Mexico at Antara, which is practically 5 minutes from both my place and office. Contacted them via email to ask if they offered delivery service—and they do!!! Hopefully this weekend I’ll be able to either go pick a few up or go have them there. Red velvet, I have missed you so much!

And the other great thing was dinner with Tamara and Cordelia at Giacovanni on Masaryk. It is so good to have some girl time, and these two are more than enough. We talked about work, food, travel and of course, love. Sergio joined us for the later part of dinner and I finally got the chance to introduce him to Cor. The night couldn’t have gone any better. 

It makes me extremely happy to see how my friends and Goose genuinely get along. This time the girls and Sergio want to go together to one of our local markets and later on cook all sorts of things…I guess that’s when two of your friends are chefs and your boyfriend a foodie :)

Super Bowl time…day 37

Today we totally slept in…till 3PM! 

Last night, Sergio and I headed over to our friends Beto and Miguel´s home for a small reunion and stayed there till 6 in the morning. Every time we all get together we have such a good time, that we easily loose track of time, and last night was the case. 

So today, I got up at 3 when I realized Tamara would probably be joining us for the big game and I had forgotten to leave the meat out to defrost. Lazy Sergio slept till close to 5. Tamara arrived just as the game was beginning, and while Sergio began prepping the food, I took Tam on a brief tour of our building. To be quite honest, I don´t think any of us besides Jay really payed attention to the game. We were talking about food, coffee, and wine…and about how we weren’t impressed by the half-time show.

The food, as always, turned out incredible. We had chicken breast and porkchops, with a side of mashed potatoes and left over pasta from the previous night. 

Tamara was actually our very first guest at our home and we truly enjoyed the company.

Tomorrow we had the day off, so while Sergio reads for school I´ll be praying for some sun so I can tan.

How many cookies?…Day 36

What was I thinking when I decided to bake old fashioned butter cookies? I guess I should have read how many cookies the batch was for…60 was not what I had in mind. Good thing is that they are so yummy. So instead of making them all plain butter cookies, I made different batches—some wish regular sugar, others with powder sugar, and some with strawberry jam. The last were everyone’s favorites and didn’t last. 

But before coming home to bake, I spent the day with Sergio running errands while Jay was at work. Life has become so calm and chill, and I love every minute of it. Tomorrow is Super Bowl Sunday and Tamara might be coming over, so it’s time to figure out tomorrow’s menu. In the mean time, Sergio cooked a kick-ass pasta with home made pesto. YUM!!!

My MacBook died?!? Day 26

It seems that just as I began to really use my MacBook more for designs for one of Sergio’s projects, my charger decides to die on me. I tried to go to the nearest iShop, but traffic was insane and there’s no way I could have made it in before closing time. So for now I’m using Jay’s charger and have decided not to take my personal MacBook to the office anymore…after almost seven months at the company I’d say its about time they provide me with “working tools.”

So in order to brighten up my evening, I decided to bake some chocolate chip cookies for the boys, and they turned out sooooo good. The DouChef oven is incredible, nothing burns due to it’s sensors and it just makes things so much easier. I think I might try baking the old fashioned butter cookies soon.

Head…about…to explode…Day 21

Day five of to caffein and I think my head is going to explode any minute now. I don’t remember ever having withdrawal symptoms. 

On a better note, I’m LOVING our new DouChef! I baked the most delish brownie ever…and the apartment smelled like heaven ;) Tonight I’ll be baking either cookies or an orange cake—and using our new washer/dryer for the first time!!! Never thought home appliances would make me this happy..Might want to go see a doctor about this.

And on an even better note, tomorrow I’ll be picking up my brand new credit card—Palacio beware, I will be armed and ready to make some purchases…and no headache will stop me.

Oven, you win! Day 12

If there’s one thing I have always loved is to bake…muffins, cakes, cookies, anything. Since we moved to Mexico City, I had been waiting to buy all my baking materials and tools and bake away. So after moving in December I began baking, and each time was a huge let down, followed by a cloud of smoke—literally! No matter how much I supervised and tried to control temperature, everything burned on the outside and remained half raw on the inside. Brownies, cookies, cakes.

Today was the last straw and have decided to no longer compete with my oven after my much-craved peanut butter cookies burned and came out flat and thin as a credit card. Lina and I sat in front of the over watching to make sure nothing burned, and even then they turned out bad.

Thinking a Magic Oven like the ones a bunch of us played with as kids is gonna be necessary.

Saturday in the Kitchen…day 8

Today we woke up and headed out the door to show Jay all the different things that are nearby…since we moved last month to the north side of town, he’s felt a little lost and confused. Upon returning home, Sergio and I went straight to the kitchen to make some homemade burgers that turned out so, so good (and huge), along with mashed potatoes. Even though I only had one burger, I ended up slipping into a food coma—as well as Jay and Sergio. 

Later in the day, I finally finished watching the third season of True Blood with Sergio—not too happy with the last episode, hopefully season 4 is better than this one. In between episodes, I had a chance to bake a cake along with a few cupcakes, and finally, nothing burned! Sergio made some awesome cappuccinos with Licor 43 to go with our cake. It was a great night, all the food turned out fantastic, now I only need to clean the war zone previously known as my kitchen.
